Recipe: Caramel Blackberry Brownies

These gooey, fudgy brownies by blogger Food Mouth definitely satisfy a sweet tooth (at least mine and quite a few of my colleagues when I made them last week). Every so often, you bite into a blackberry for a gush of fruity flavour. They’re super easy to make as well and apart from the blackberries and caramel, you likely already have all of the ingredients at home.

Ingredients: 

  • 1/2 cup butter
  • 1/2 cup sugar
  • 3/4 cup dark brown sugar
  • 3/4 cup dark cocoa powder
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup all-purpose (plain) flour
  • One 6 oz. container blackberries (I’d recommend more to serve on top)
  • 3/4 cup caramel sauce

Pre-heat the oven to 350F / 176C and lightly grease an 8×8 or 9×9 inch pan (or line with wax paper (parchment paper)).

Microwave butter, both sugars and the cocoa powder for about 40 seconds, or until the butter has melted and then stir until it’s smooth.

Crack in the eggs and add vanilla. Stir.

Mix in baking powder, salt and flour.

Fold blackberries into the mix. I kept some aside to serve on top. If I make these again, I’ll buy a whole second container so each brownie square can have more fruity goodness.

Pour half of the mix into the pan and add an even layer of caramel.

Spread the rest of the batter on top.

Pop it into the oven for about 25-30 minutes or until a toothpick comes out clean.
